Ingredients:
1 ½ cups Rice, uncooked
1 cup sweet onion, chopped
¾ cup Bell Pepper, chopped
½ cup Mushrooms, chopped
½ cup celery chopped
2 cloves Garlic, crushed
2 Tablespoons olive oil
3/4 teaspoon dry rubbed sage
¼ teaspoon black pepper
½ teaspoon salt
4 cups chicken broth*
3 thick slices bacon, cooked and crumbled
Directions:
Heat oil in a 5 quart skillet or saucepan.
When hot, saute onion, pepper, celery, mushrooms and garlic until tender.
Stir in sage.
Add chicken broth , salt and pepper, and bring to a boil.
Stir in rice and simmer, stirring occasionally until rice is cooked, about 25 minutes.
Stir in bacon just before serving.
