Serves 2-4 |
Ingredients:
2 pounds potatoes, peeled and cubed, about 4 cups (I like half Yukon, half Russet)
4 Tablespoons Butter
¼ cup Mayonnaise
¼ cup Sour Cream
1/2 teaspoon Salt
Directions:
Fill a large pot with 2 quarts of water and bring to a boil.
Peel and cut potatoes into eighths or large cubes.
Boil potatoes in water until tender.
Drain potatoes when done, return to pot.
Mash slightly with hand masher.
Add butter, mayo, sour cream and salt.
Mash well and whip until smooth.
