Ingredients:
1 large onion – sweet onions are best
1 cup flour*
1/4 teaspoon Baking powder
1 egg, slightly beaten
1/4 cup milk
1 cup Panko*
1/2 teaspoon Cornstarch
1/4 teaspoon paprika
1/8 teaspoon garlic salt
Dash of black pepper
Hot oil in deep fryer
Ring sauce (below)
Directions:
Preheat your oven to 250 degrees. Have a baking sheet ready.
You will need three deep and wide bowls-cereal bowl size.
In the first bowl, combine the rice flour and baking powder.
In the second bowl, combine egg and milk
In the third bowl, combine panko, cornstarch and spices.
Slice the onion into ¾ inch thick slices, then carefully divide them into rings.
Put three or four papertowels onto a plate for finished rings.
Place a slice of onion in the flour mixture and swirl it around and flip it over until well coated.
Shake it off a little then put it in the egg bowl, swirl around with a fork, flip etc. Let the major drips come off before putting it in the bread crumb bowl.
In the crumb bowl, carefully spoon the crumbs over the top of the ring until well coated.
Tap off the excess crumbs before putting it in the fryer.
Use separate utensils for the dry and egg bowls.
Fry until the ring is a deep golden brown.
Place the ring on the papertowel covered plate for a minute or two, then into the warm oven to keep hot while you finish the rest of the rings.
I usually prepare 3-4 at a time and set aside then fry them while I prepare 3-4 more.
Ring Sauce
Combine in a bowl:
¼ cup Mayonnaise
¼ cup Ketchup
½ teaspoon Prepared yellow mustard
1 teaspoon dill pickle juice
